Served with a warm self foraged Ramp Butter Crostini topped with foraged Spring Onions and Local Goat Cheese

rich, smoky brisket folded into Heirloom Masa and slow-steamed with Beef Tallow and topped with a bold, smoky Morita-Chile Salsa and house-made Cilantro Lime Crema
